Nutritional value of organic seitan?
Organic seitan is low-fat and high-protein. Seitan does not contain uric acid (meat does) or cholesterol. On top, Bertyn bio seitan is organic. Bio means that Bertyn seitan does not contain antibiotics, pesticides, chemical preservatives (such as sulphite) or chemical colouring or flavouring agents. Bertyn seitan never suffers from mad cow disease, swine flu, bird flu, Mexican flu or growth hormones…

A word on pollutants in meat and fish: Sodium nitrate, sodium nitrite and sulphite are used in meat as a preservative. They are transformed into nitrosamines in the stomach. Nitrosamines are considered carcinogenic. Vitamin C and other antioxidants prevent that transformation.
Antibiotics are automatically processed into the feed of farmed fish and other animals. Calves are fed thyroid inhibitors to increase the water content in meat. Meat and fish contain haem iron, or easily absorbed iron. Too much haem iron in the blood produces a chain reaction of free radicals, causing stress to the immune system and an increased risk of heart and vascular diseases. 60% of pesticides and 80% of PCBs and dioxin enter our bodies via meat and fish.
Losing weight with seitan
Seitan and losing weight can go hand in hand. Seitan contains only 94 to 120 calories per 100 g. That is considerably less than rice, bread, spaghetti, or breakfast cereals. Seitan can help with a weight loss diet because it contains less kilocalories than meat or fish. But also because seitan hardly contains carbohydrates and fats. Furthermore, Bertyn bio seitan contains fibres. Opting for seitan as a substitute for meat or fish in a weight loss diet is a good choice. It is generally accepted that it is easier to lose weight with a low-carb and low-sugar diet, because proteins don’t affect our blood sugar levels and therefore don’t cause dips or cravings between two meals. Anyone who wants to lose weight should watch their calorie intake and make sure to include sufficient exercise in their programme. Exercise and reduced calories are the key words for weight loss. A healthy body needs at least half an hour’s exercise per day; that doesn’t need to be intensive exercise. To be in optimum shape, the body needs at least 1 to 2 hours of exercise per day.
Phytic acids in seitan?
Phytic acids can be found in many grains and typically form a compound with bivalent minerals such as iron (Fe²+), calcium (Ca²+), zinc (Zn²+) and magnesium (Mg²+). Once contact with phytic acid has been established, the combination prevents the minerals from being absorbed by the body. Fermentation, germination and rinsing destroy or eliminate phytic acid activity. This means phytic acid activity has been reduced in seitan or organic seitan, but not completely eliminated.
